Chocolate Candy Cane Cookies

A favorite cookie to be enjoyed during the holidays. Yum, enjoy!

Chocolate Candy Cane Cookies

Ingredients:
Cookies
1 3/4 cups all purpose flour
1/2 cup unsweetened cocoa powder (preferably Dutch-process)
1/4 teaspoon salt
1 cup sugar
3/4 cup (1 1/2 sticks) unsalted butter, room temperature
1 large egg

Filling
1 cup plus 2 tablespoons powdered sugar
3/4 cup (1 1/2 sticks) unsalted butter, room temperature
3/4 teaspoon peppermint extract
2 drops (or more) red food coloring

1/2 cup crushed red-and-white-striped candy canes or hard peppermint candies (about 4 ounces)

Preparation:
For cookies:
Whisk flour, cocoa, and salt in medium bowl to blend. Using electric mixer, beat sugar and butter in large bowl until well blended. Beat in egg. Add dry ingredients; beat until blended. Refrigerate dough 1 hour.

Preheat oven to 350°F. Line 2 baking sheets with parchment paper. Scoop out dough by level tablespoonfuls, then roll into smooth balls. Place balls on prepared baking sheets, spacing about 2 inches apart. Using bottom of glass or hands, flatten each ball to 2-inch round (edges will crack). Bake until cookies no longer look wet and small indentation appears when tops of cookies are lightly touched with fingers, about 11 minutes (do not overbake or cookies will become too crisp). Cool on sheet 5 minutes. Transfer chocolate cookies to racks and cool completely.

For filling:
Using electric mixer, beat powdered sugar and butter in medium bowl until well blended. Add peppermint extract and 2 drops food coloring. Beat until light pink and well blended, adding more food coloring by dropfuls if darker pink color is desired. Spread 2 generous teaspoons filling evenly over flat side of 1 cookie to edges; top with another cookie, flat side down, pressing gently to adhere. Repeat with remaining cookies and peppermint filling.

Place crushed candy canes on plate. Roll edges of cookie sandwiches in crushed candies (candies will adhere to filling). (Cookie sandwiches can be made ahead. Store in single layer in airtight container at room temperature up to 3 days or freeze up to 2 weeks.)

The never ending issue of slots and gaming in Maryland continues.

As ABC New reports, "The Cordish Company says its Arundel Mills gambling facility will look a lot like its recent high end project in Indianapolis."This facility will be a world class gaming and entertainment facility. We will spend more money developing this one facility than was spent to develop all of Arundel Mills," said President of Development Joseph Weinberg Cordish says it will bring four thousand jobs, include fine dining, entertainment and provide a financial boom for Anne Arundel County."I think when people understand the benefits of the facility and why it makes perfect sense for the casino to be at Arundel Mills, we'll get support."But for The Cordish Company, this is far from a done deal. It still has to pass the Anne Arundel County Council.""If we don't pass this bill, there will be no slots in Anne Arundel County," said Council Chairman Edward Reilly."

Is BRAC real? Will it be coming soon? The answer is yes. It is on the horizon and many businesses in our area are preparing for it. The story listed below from the Columbia Flier details upcoming events.

"Even as companies across the state scale back operations or close entirely and local governments lay off workers, at least one bright spot glows on the economic horizon: BRAC.Base Realignment and Closure, the process in which the U.S. Department of Defense is shifting jobs from other military bases to five locations in Maryland, is expected to bring as many as 60,000 new jobs to the state. About 22,000 of those jobs are expected at Fort Meade in Anne Arundel County, just across the Howard line.Local officials, including those in Howard County, say those jobs could give a much-needed boost to the economy.“We’re glad that there are thousands of jobs coming to the region,” said County Executive Kenneth Ulman. “We believe it’ll provide an economic development boom, especially when it comes to folks who are looking for work.”BRAC will account for the largest employment growth in the state since World War II, as defense contractors follow military jobs to the area, according to the state BRAC office. All moves must be completed by September 2011, but the state will continue to benefit into 2015 and beyond.Groundbreaking is occurring this month on several new buildings at Fort Meade, and the first wave of jobs is expected in 2010, said Kent Menser, executive director of the county’s BRAC office. While there will be thousands of Defense Department jobs moving to the area through BRAC, expected growth at the National Security Agency, located at Fort Meade, and among federal contractors is also factored into the equation.Because the process is spread out over several years, local residents will not notice any immediate impact.“It’s not a tsunami, but phased growth,” Menser said."

This will be a much needed injection of jobs...and capital, to our area.

Slots in Arundel Mills?

The idea of slots has reached its pinnacle...through hearings, votes, amendments and even through 2 governors.

Are they coming? Will they revitalize Maryland's economy? Will they have a negative impact on the Arundel Mills business and entertainment district?

There are speculations on the matter...both pro and con.

Tyeesha Dixon with the Baltimore Sun investigated the con side of the matter, and recently wrote an article which articulately displays the voice of those who do not want the casino to come to Arundel Mills.

According to the article,"Neighbors of Arundel Mills get their chance Thursday night to tell a divided Anne Arundel County Council what they think about legislation that would allow the state's largest slots parlor to be built near the mall.As many as 100 people are expected to squeeze into the council's Annapolis chambers for the public hearing, which was scheduled to collect public opinion on zoning changes needed for the billion-dollar project to go forward. County Executive John R. Leopold submitted the legislation and is urging its passage, but many of the mall's neighbors - and at least two of the seven council members who will decide the matter - oppose it."

So the question of "will they build" remains.

We had a very successful opening, and it was due to our staff. I have heard many people say,"I could never have accomplished this without my staff members..", but actually mean it!

We had an employee rally the other day to celebrate our staff members and commemorate their hard work during the pre-opening phase. I will never be able to emphasize and re-emphasize the importance of our staff and what they mean to us as a hotel.

The Hilton Garden Inn Baltimore/Arundel Mills officially opened when we had our ceremonial ribbon cutting / tree planting.

We invited friends and dignitaries alike, and all were amazed at our new building. Everyone marveled at the little things. "Green" packaging for our soaps and bottles, design elements within the rooms and the technology used throughout.

We have our serious time, and our fun time as well. We ended our ceremony by playing a some Nerf hoops, and gaming on what the score would be in some of the opening round games in the NCAA tournament. We called it our "Hilton Hoopla"!

We raised funds for charities, played some hoop and fought about our winning teams in the tournament!

We Are Almost There!

We have moved out of the trailer and into the building, and as a whole are almost breathing our collective sigh!

The staff and management team have been working around the clock to finish setting up the rooms and complete the minor details...all in our race to the finish line. We are scheduled to cross the finish line on Monday, where we will celebrate by conducting a ceremonial tree planting.

The president of PMHS and our friend, Greg Miller, stopped by yesterday to congratulate everyone and give words of comfort and encouragement. After opening several new hotels in the past year, he is still excited and very vibrant about what the future holds for the Hilton Garden Inn Baltimore/Arundel Mills.

Our Business Center is complete!

A few weeks ago, we posted a blog that detailed the benefits of our Work Smart features located throughout the Hilton Garden Inn Baltimore/Arundel Mills. Today we are able to take it one step further and solidify our dedication to our customer by offering a 24 hour business center!

We will offer several desktop workstations, plugs for laptop connectivity, fax machines and printers. We want you to be at your best!

Indoor Pool and Spa!

Our indoor pool is finished! I have blogged a few times in the past about its construction and tile work...but it is now complete!

It looks as if you stepped out of a hotel and into a spa resort!

The best part of our hotel...is that the hotel takes over in providing hospitality when we are not there. Every room has a "hospitality center" where you have the ability to recover and relax in the comfort of your room. Don't want to go out to eat? Get a few tasty treats from the Pavilion Pantry and heat them in the microwave in your room and relax. Store some beverages in the mini-fridge to keep them cold or make some piping hot, delicious coffee in the coffee maker.

The contractors have finished laying the carpet in many of the major public areas within the entire hotel...and it looks fantastic!
